Coconut-Lime Brown & Wild Rice Fusion

Ingredients (4 servings)

½ cup wild rice
½ cup brown rice
1 ½ cups coconut milk (unsweetened)
1 ½ cups water or vegetable broth
1 tsp salt
Zest of 1 lime
Juice of 1 lime
2 tbsp toasted shredded coconut (optional, for garnish)
2 tbsp chopped fresh cilantro (optional)

 

Instructions
Rinse & combine
Rinse wild and brown rice under cold water.
In a medium saucepan, combine rice, coconut milk, water/broth, and salt.
Cook
Bring to a boil over medium-high heat.
Reduce heat to low, cover, and simmer for 40–45 minutes until rice is tender and liquid is absorbed.
Add citrus
Remove from heat, fluff rice with a fork.
Stir in lime zest and juice.
Garnish & serve
Top with toasted coconut and cilantro if desired.
Serve warm as a side to seafood, chicken, or grilled vegetables.
