Coconut Rice Pudding With Fresh Fruits

INGREDIENTS (4 Servings)

½ cup jasmine rice, rinsed
1 cup water
1 cup coconut milk (full-fat for creaminess)
¼ cup sugar (adjust to taste)
½ tsp vanilla extract
½ tsp almond extract
Pinch of salt
Optional: ¼ cup milk (dairy or non-dairy) to loosen texture before serving
Fresh fruits for topping:
– Berries (strawberries, blueberries, raspberries)
– Apple, mango, or kiwi slices
– Banana or dragonfruit
Optional toppings: toasted almonds, shredded coconut, mint leaves

INSTRUCTIONS

Cook the rice:
In a saucepan, combine jasmine rice and water. Bring to a boil, then reduce the heat and simmer (covered) for 10–12 minutes, or until the water is absorbed.
Simmer with coconut milk:
Add coconut milk, sugar, vanilla, almond extract, and salt. Simmer uncovered for another 10–15 minutes, stirring occasionally, until thick and creamy.
Adjust texture:
If pudding is too thick, stir in a splash of milk to loosen it to your desired consistency.
Cool down:
Serve warm, or let it chill in the fridge for at least 1 hour for a refreshing dessert.
Top & serve:
Spoon into bowls and top with fresh fruits. Add toasted almonds or coconut for texture, and mint leaves for a fresh finish.
