Thai Watermelon Salad

A perfect dish to celebrate summer, this refreshing sweet and savory salad is excellent as a side or main.

Ingredients

  • 1 tablespoon fresh ginger, minced
  • 1 teaspoon fresh garlic, minced
  • ½ cup seasoned rice vinegar
  • ½ cup orange juice
  • ⅛ cup toasted sesame oil
  • ½ cup extra virgin olive oil
  • 1 teaspoon light soy sauce
  • 3 cups cooked al dente and cooled True Origin Foods Organic Brown Calrose Rice
  • 6 cups diced seedless watermelon
  • 1 cup scallions, chopped
  • ½ cup cilantro, chopped
  • 1 cup dry roasted and salted peanuts
  • Freshly cracked pepper, to taste

Directions

Whisk together the ginger, garlic, vinegar, juice, oils and soy sauce.  Toss the rice with dressing when the rice is cool.  Add scallions, cilantro to the rice and dressing.  Add the diced watermelon and peanuts immediately before serving to avoid the salad becoming soggy.
